|During the semester there will be two written tests for 100 points; to obtain level A, must be obtained at least 92 points, to obtain B at least 83 points, the C rating of at least 74 points, for the evaluation D of at least 65 points and on the evaluation E of at least 56 points.|
|Learning outcomes of the course unit:|
|Student will learn how to control and evaluate the quality of raw cow's milk. Knows and controls the determination of its basic components and physico-chemical properties. Gain practical experience and skills in the production of selected dairy products.|
|Input, the principles of safety, means of establishing protocols.
Determination of fatness milk and milk products.
Determination of acidity of milk and milk products.
Determination of lactose in milk.
Determination of dry matter in milk and milk products. Watering of milk.
Inhibitory substance in the milk.
Proof of pasteurization of milk. Properties of cream.
Rennet test, strength rennet.
Production of fresh cheese, analysis of the products.
Production of acidic cheeses, analysis of the products.
Production of yoghurt, analysis of the products.
