Learning outcomes of the course unit:
Chemical composition of water as a basic component of beverages, strategy and philosophy of beverage industry. Characterization of natural foodstuffs used by production of soft drinks -- fruit, coffee, tea. Biotechnological aspects of non-alcoholic beverages, the biochemical processes occurring in their manufacture. Characterization of additives - preservatives, and substances that improve the sensory properties of beverages.
