Learning outcomes of the course unit:
Students have fundamentals of the advanced/specialized processes of food production with emphasis on the impact of individual processes on biological and nutritional value of foods.
 
Course contents:
Technological processes that required no or minimal heat energy; new trends in food irradiation; processes using high hydrostatic pressure; technological processes required ohmic, dielectric, infrared and microwave heating; extraction, adsorption, bleaching and distillation in food production; thermal processes and food quality.
