Practical application of theoretical knowledge in microbiology food production in order to protect human health.
Course contents:
Input microflora - the microbiological and biochemical and technological changes of foodstuffs and food ingredients.
Microbiological-chemical decomposition of proteins.
Microbiological-chemical decomposition of fats.
Sensory important products of microbial degradation of proteins.
Degradation products of amino acids.
The impact of technological operations on activity of heat-resistant mould in expressly acidic foods.
The impact of technological operations on the survival of pathogens in food.
Analysis of Listeria monocytogenes in selected types of food.
Assessment of microbiological processes in the process of food storage.
Analysis of technological beneficial substances produced by LAB.
Use of available methodologies for analysis of pathogenic microorganisms in food.
Determination of microorganisms MALDITOF methods, PCR and immunological methods.
Use of HPLC for the determination of contaminating bacteria.
