Modified starchs and their industrial use
This bachelor thesis is intented to the characteristics of modified starches, their physical and chemical properties. However, it also deals with the characteristics and composition of native starch and starch grain structure. It describes vegetable raw material such as corn, tapioca, wheat, potato, sorghum and rice, and also processes for the extraction of starch from these raw materials. It states methods of chemical and physical modifications of native starches and starch product of these modifications. Native starches, especially modified starches are at present very widely used not only in the food industry, such as dairy products, baked goods, candies, freezing and canning, as well as in the paper, textile and pharmaceutical industries as the crucial component in the different production processes.
