Functional Properties of Dietary Fiber
The main aim of the bachelor thesis was to define the functional properties of the dietary fiber and the conditions that affect them. This bachelor thesis is divided into two chapters. The first chapter focuses on defining functional properties such as hydration, foaming, emulsifying properties, the oil holding capacity, and other functional properties. The second chapter is focused on fiber processing. It talks about the effect of processing on the functional properties of different fiber preparations. Fiber preparations are modified to improve their functionality and increase their content in foods. Different types of processing have a different impact on the physico-chemical properties of the fiber preparation and influence its use in the food industry.
