Monitoring of Gluten Content in Meat Products
Summary:Abstract Coeliac disease is an inflammatory disease of the small intestine with hypersensitivity to wheat protein - gluten, which is eg. in flour, wheat, rye and barley, etc. The untreated form may cause complications and life-threatening disease. Patients affected by this disease need to follow gluten-free diet for life. The aim of this thesis was to detect levels of gluten in meat products. We approached the three major producers of meat products and asked them for cooperation in the pursuit of gluten content in meat products. In addition to providing samples of meat products, we have also sent the spice mixtures, because most of the contamination comes mostly from them. Gluten content were evaluated by ELISA test from the company Profood - JEMO TRADING s. r. o. Evaluation was conducted at the State Veterinary and Food Institute in Bratislava. Most samples came out negative, and some gluten content was undetectable. It can be noted that the samples we examined and were labeled "suitable for celiac patients" are safe for consumers with celiac disease. Keywords: coeliac disease, gluten, meat products, ELISA test
