Summary: Práca je zameraná na sumarizáciu aktuálnych poznatkov a mykotoxínoch a ich producentských mikroorganizmoch v mlieku a výrobkoch z neho, vrátane ochutených: fyziológia potenciálne toxických mikromycét, chemické a technologické vlastnosti príslušných mykotoxínov, ich toxicita a negatívne zdravotné účinky na konzumentov, preventívna a nápravné opatrenia, hygienické limity a legislatíva.
