Summary: Cieľom práce bude kvantitatívna a kvalitatívna analýza vzťahov medzi skupinami mikroorganizmov (baktérie mliečneho kysnutia, Brevibacterium linens a Geotrichum candidum), ktoré ovplyvňujú mikrobiologickú bezpečnosť a senzorickú kvalitu syrov.
