Summary: Kakaovník pravý (Theobroma cacao L.) a produkty z neho získané patria všeobecne medzi potraviny bohaté na fenolové zlúčeniny, ktoré vykazujú výrazný fyziologický účinok. Kakaové šupky, získané počas praženia kakaových bôbov, predstavujú hlavný vedľajší produkt pri spracovaní kakaa a matricu mimoriadne bohatú na fenolové zložky i vlákninu.
