Annotation: Cieľom dizertačnej práce bude preštudovať možnosti inovácie cereálnych potravín za účelom zvýšenia ich nutričnej hodnoty. Súčasťou práce bude sledovanie vplyvu prídavku netradičných plodín a vedľajších produktov získaných pri spracovaní rastlinných materiálov na reologické parametre pšeničného cesta a kvalitu finálnych výrobkov.
Annotation in English: The aim of the dissertation will be to study the possibilities of innovations of cereal foods for the purpose of increasing their nutritional value. Part of the dissertation will be oriented to monitoring of the influence of the addition of non-traditional crops and by-products obtained from the processing of plant materials on the rheological parameters of the wheat dough and the quality of the final products.
