Annotation: Kvalitatívna a kvantitatívna analýza mikrobioty tradičných afganských sušených potravín. Charakterizácia vzťahov medzi ich obsahom vody a aktivitou vody; modelovanie ich sorpčnej izotermie. Optimalizácia ošetrenia studenou plazmou s cieľom žníženia mikrobiologickej záťaže pred rehydratáciou. Rehydratácia ošetrených a neošetrené materiálov . porovnanie správania sa vybraných natívnych populácií, resp. umelo naočkovaných.
Annotation in English: Qualitative and quantitative microbiological analysis traditional Afghan dried foods. Characterization of relationships between their water content and water activity; modeling sorption isotherm. Optimization of cold plasma treatment to reduce the microbiological load before rehydration. Rehydration of treated and untreated materials: comparing the behavior of selected native populations or artificially inoculated ones.
