Annotation: Súčasné požiadavky EÚ sú zamerané na produkciu inovatívnych a ekologických potravín, ktoré obsahujú prírodné látky získané z trvalo udržateľnej rastlinnej biomasy. Cieľom práce je skúmať vhodný spôsob úpravy rastlinnej biomasy rakytníka rešetliakového s ohľadom na zachovanie biologicky aktívnych látok, ktoré sa budú pridávať do potravín. Bude sa skúmať vplyv tepelného spracovania a skladovania potravín na ich stabilitu, obsah vybraných bioaktívnych látok a ich interakcie s ďalšími zložkami potravín.
Annotation in English: The current EU requirements are focused on producing innovative and environmentally friendly foods, which containin natural substances derived from sustainable plant biomass. The aim of this work is to examine the appropriate method of treatment the plant biomass from seabuckthorn, with respect to the preservation of the biologically active substances, which will be added to food. The influence of heat treatment and storage of foods on their stability, content of selected bioactive substances and their interaction with other food ingredients will be examined.
