Summary: Cieľom diplomovej práce je predikcia počtu mikroorganizmov pri výrobe tradičných slovenských parených syrov zo surového mlieka. Na zistenie ich početnosti v procese výroby simulačnými výpočtami sa aplikujú primárne a sekundárne prediktívne modely.
