Summary: Študent charakterizuje jednotlivé náhrady cukru, ktoré sa využívajú v pekárenskej technológii. V praktickej časti bude nahrádzať sacharózu v receptúre cereálnych výrobkov jednotlivými náhradami cukru a stanoví kvalitatívne parametre týchto výrobkov.
