Summary: Mirakulín je glykoproteín izolovaný z rastliny Synsepalum dulcificum. Má zaujímavé senzorické vlastnosti, v kyslom pH mení kyslú chuť na sladkú. Práca je koncipovaná ako teoretický projekt zameraný na pôvod, spôsoby izolácie mirakulínu, jeho vlastnosti a možnosti využitia ako biologicky aktívnej látky.
