Summary: Práca sa zaoberá skúmaním podmienok aplikácie asparaginázy na cereálne suroviny (raž, ovos, tritikale) ako účinného spôsobu prevencie tvorby nežiaduceho akrylamidu. Budú skúmané základné prekurzory akrylamidu (aminokyseliny a sacharidy) a zmena ich zastúpenia po aplikácii asparaginázy za rôznych podmienok teploty, vlhkosti, doby inkubácie a koncentrácie enzýmu. Na stanovenie obsahu prekurzorov budú využité metódy kvapalinovej chromatografie.
