Project description:The aim of project is to describe the properties and to find procedures to characterize the quality and safety of foods and drugs by means of EPR, UV/VIS, NMR, thermoanalysis DSC and electrochemical techniques. The natural drugs produced by microorganisms will be investigated as radical scavengers, and carotenoids as pro- and anti-oxidants at variable oxygen pressure and trace element concentrations. The dose of gamma-irradiated foods will be determined to innovate EU norm. The of wine samples (?finger print?) will be characterized by means of high resolution NMR spectroscopy, tests of stability of drugs undertaken and quantum chemical procedures developed to interpret the results obtained. The basic parameter in all measurements will remain the induction period of pro- and anti-oxidation. Its evaluation and comparison obtained from various techniques should result into an unambiguous characterization of quality and safety of foods and drugs.
