|Project description:||- Utilization of non- traditional raw materials to produce new dietary products for people with health disorder, - Application of probiotics in several meat products. Examination of their sensory and physicochemical properties, - Effect of probiotics on the health of population. Selected group of consumers (students at 20 - 25 years ) will be consuming fermented meat products, producing by traditional technology with defined addition of probiotics and antioxidants during defined time period. Comparative data about antioxidant and another elements of nutrition will be the ascent of these project.|
