Project description:Carotenoids are pigments that are found in plants and microorganisms. The protective role of carotenoids is related to their antioxidant ability to efficiently scavenge free radicals. The aim of this project is to test the behavior and radical reactions of a selected group of carotenoids under various conditions using Electron Paramagnetic Resonance (EPR) spectroscopy as well as to compare the effects of the partial pressure of oxygen (pO2) and carotenoid concentration on the radical scavenging activity (antioxidant efficiency) of carotenoids. In addition, we try to ascertain if the carotenoids could affect metal ion (Cu2+ and Fe2+) mediated lipid peroxidation processes and if the carotenoids in these processes could reduce the total yield of radicals.
