|Project description:||This investigation will be performed by two groups with ample expertise in the chemistry of spin trapping, EPR spectroscopy and quantitative evaluations of spectroscopic experimental data. A well documented, reproducible and evidence-based general procedure for antioxidant activity will facilitate the classification of foodstuffs and has a high potential to lead to a generally utilized procedure. This is moreover very likely since transportable (i.e. handy) EPR spectrometers and spin trapping agents are commercially available.|
